The new Trim Healthy Mama Baking Blend has been a massive hit in the Trim Healthy Mama community!  So massive that THM can barely keep it in stock.  It's been the biggest selling product they've released and I am NOT at all surprised.  It is just THAT good.  I get asked a lot, "What can I do if I don't have Baking Blend in this recipe?"  In many of my recipes, I've tried to give you ideas on what to substitute for an E, FP or S.  This recipe comes from testing the Chocolate Mega Muffin that I posted recently.  It turned out so well that I wanted to post it up on it's own. OatflourcakeIngredients:
  • 1/4 cup Oat Flour (ground oats) or 1/4 cup THM Baking Blend (Using Baking Blend makes this a FP)
  • 1 Tbs cocoa powder
  • 1/4 cup egg whites
  • 1 Tbs unsweetened applesauce (1 Tbs of 0% greek may work too)
  • pinch of salt
  • splash of vanilla
  • 1 tsp baking powder
  • 2 tsp THM Sweet Blend (taste batter to adjust sweetness)
  • 3 Tbs of unsweetened almond milk or water
Instructions: Mix all the ingredients in a small bowl with a fork.  Pour into a microwave or oven safe baking dish or mug.  Bake at 350 for 15-18 minutes.  If using a microwave, check at 1 minute and 20 seconds and go up from there. Top with 1 tsp of butter, fat free redi whip, non-fat Greek Yogurt that is sweetened and mixed with vanilla.  I think Laughing Cow Cheese is a nice topping as well when sweetened and mixed with a little vanilla.  Almost tastes like a cream cheesy frosting that is low enough in fat for E treats like this one. oatflourcake2I think this is a keeper!  This could make three cupcakes or this one cake. It is one serving.  I may work on a full size cake to post up soon.  These last two recipes really remind me of chocolate cake that I ate before THM in flavor and texture. ** You'll want to eat some fruit with this or enjoy it as a dessert after an E meal since it's lower in carbs.  Some 0% Greek yogurt would be nice as well if you eat it on it's own to add some good lean protein.  I enjoy it sweetened with Sweet Blend and vanilla extract.     Are the Oat Flour and the Baking Blend always interchangeable? And do they always measure the same?

      For me they have been, BUT the oat flour is best kept in an E setting…so that has to come to play in the recipe.

    Can I have half of the triple zero Greek yogurtand keep it an E?

      It needs more carbs really to be a full E so a yogurt is a good choice.

    This turned out fabulous! I quadrupled this recipe (used a brownie pan), added a dash of cinnamon, 2 Tablespoons of carob powder, and a 1/4 of apple cider vinegar. It was so good! Even my picky eater loved it! I baked it for 25 minutes

    Call me crazy, but I’m about to multiply this by 12! Half oat flour, half BB, 12 whole eggs, etc. for a 2-tier cake for my parents’ anniversary party! Any helpful thoughts? Thanks for this recipe! It’s my favorite!

      Also, I didn’t have any super sweet blend on hand, so I used 2 level doonks of pure Stevia powder.
