Stuck in a rut?  Trying to figure out what to eat with your main course?  When I eat low carb or Trim Healthy Mama "S" meals,  I really love having a variety of veggies to choose from in my meal rotation.  I'd love to hear your favorites in the comment section.  Maybe you can give me some new ideas too!

 

  1. Loaded Spaghetti Squash Casserole-

The most popular recipe I've ever created and that many of you seem to love too!  I love this dish so much and think it's fancy enough to take to any get together or potluck as well.  It's a perfect side dish for any Holiday! 

2. Loaded Cauliflower Casserole-

Much like the spaghetti squash casserole, but using the low carb super star...Cauliflower! I make this gem all the time and we all enjoy it's cheesy goodness.  I've taken this to many events and have gotten rave reviews.  One Facebook friend said that she adds some chopped jalapeños for a popper/spicy kick! I am going to try that soon.

3. Avocado & Veggie Salad-

Nothing like good healthy fats that come with the avocado.  This salad is so easy and delish!  This is so easy in the summer time when these veggies are in season.  

4. Veggie Hash-

I made a batch to go with my roast tonight!  I don't miss fried potatoes when I have this yummy treat to eat.  I cut the end off of a bag of radishes.  I fry them up in butter in my cast iron skillet with some salt, pepper and garlic.  Tonight I diced up a zucchini in with my radishes and added two slices of chopped bacon.  Oh my goodness!  So good!  I recently was given an air fryer and it works so well for this too. 

5. Green Beans-

I adore green beans.  I cook them one of two ways all the time!  1. Fry them in a skillet with butter, garlic, salt, pepper and chopped bacon.  2. I spray a cooking sheet and dump on the desired amount of frozen green beans and spread them out.  I spray them with a bit of cooking spray.  Add the salt, pepper, garlic powder and parmesan cheese.  I bake them at 400 degrees for 18 minutes and check them from there.  I usually flip them around at some point.

6. Yellow Squash Casserole-

Sarah is one of my closest THM blogging friends.  Her Yellow Squash Casserole is an absolute must any time, but I love taking it to holiday gatherings.  I always get asked for the recipe!

7. Buttery Lemon Pepper Broccoli-

My dear friend, Robin, has a beautiful blog full of yummy recipes. I love eating broccoli and trying new ways to fix it.

8. Crunchy and Tangy Bacon Coleslaw-

Darcie created this delicious treat!  I enjoy taking it to picnics, but it's truly yummy all year long!

9. Jalapeno Poppers-

I don't know if this is a legit side, but I eat it as one.  I often dice up chicken and fry it up in butter and add some Frank's Buffalo Sauce at the end.  I then will bake up some poppers!  I slice however many we will eat in half. I then clean out the seeds and membranes.  I stuff each half with some cream cheese and lay them on a baking sheet.  I sprinkle some garlic powder on all of them. I then wrap each pepper half with a half slice of bacon.  I bake then at 400 degrees for about 18 minutes.  I then usually put the oven on broil and crisp up the tops.  I take them out of the oven when they are crispy on top and place them all on a paper plate covered with paper towels to blot them off of the sitting grease.  SO GOOD with ranch dressing.

10. 5 Flavors of Krispy Kale Chips-

I get one kicks where I eat and eat kale chips!  I came up with 5 flavor options since I love them so much!  My biggest hint is to keep an eye on them so they don't burn.  They can burn quickly if you get busy in the kitchen.

That's my list!  Maybe I should've made it my Top 20 low carb sides because I truly could've kept going.  I guess that just leaves room for most posts in the future.
