How about an easy, flax muffin to add to your breakfast lineup? I have flax meal or flax flour in my gluten free arsenal!  It's easily found at the grocery store in the baking isle or gluten free area.  Flax is so good for you!  I wanted to find a way to use up some of my flax and to add it to my diet, so this yummy muffin was the result. Why flax?  Well, it has amazing health benefits for one. You can pop over to Dr. Axe's website if you are interested in reading up on flax.  It's low carb, full of good fat and is great for your digestion for starters.  Looks like a win to me!  I think it makes a hearty and delicious muffin too. Ingredients:
  • 1/4 cup Flaxseed meal or flour (same thing)
  • 1 tsp baking powder (aluminum free)
  • pinch of good sea salt
  • 1/2 tsp cinnamon
  • 1 Tbs unsweetened cashew or almond milk
  • 1 Tbs greek yogurt
  • 1 egg
  • 1&1/2 tsp of THM Super Sweet
  • 1 tsp vanilla
  • 5 chopped pecans (or you could use walnuts)
Instructions: Spray a microwave safe bowl or mug with cooking spray.  Add the dry ingredients to the bowl. Mix in the wet until everything is well incorporated.  Add in the pecans or walnuts if you are using them.  Microwave for 1 minute and 30 seconds.  If it still seems a bit wet, microwave longer. Each microwave cooks differently.  You could bake it at 350 for about 10 minutes and go from there for your baking time. I haven't tried it in the oven yet to know an exact time. *Dairy free- use 1 tbs of water or unsweetened milk instead of the greek yogurt in the muffin.  Skip the frosting or make a dairy free option. I topped my muffin with this easy frosting:
  • 1 Tbs cream cheese (soft)
  • 1 Tbs butter (soft)
  • vanilla
  • doonk of THM Stevia
Cream it together. It's my go-to mug cake frosting.

  8. You can leave you out the nuts if you can't have them.
  This is super easy!  If you avoid nuts, please leave them out. I'm sure it will still taste yummy.   I'm anxious to try some other variations with flax soon.  I loved how this muffin turned out.  I'll eat it for a snack or breakfast with some bacon or sausage.  Maybe some greek yogurt sweetened with stevia and topped with a few berries.  Yummy!     Really good with great flavor and texture! Opted out of the frosting, cut it in half for hubby and self along with a little vanilla low-carb ice cream…mmm! Will definitely make again. Thanks!
