Beef Stroganoff screams creamy comfort food.  With some experimenting I came up with a fun twist on the beloved dish to make it low-carb friendly and on plan for Trim Healthy Mama.  Cauliflower seems to be the go-to veggie these days.  I know I love it in so many dishes that call for potatoes or even pasta.  It's a lifesaver!  I'll tell you a secret...I don't like mushrooms.  If you do love them, feel free to add them to this dish.  My family and I aren't fans!  No pasta here either.  It's the taste of Stroganoff, without the carbs! beefstroganoffIngredients:
  • 1 lb ground beef
  • 1 1/2 cups beef stock
  • 1 Tbs butter
  • 1/2 medium onion, chopped and sauteed in butter
  • 1/2 tsp minced garlic
  • 1/2 cup sour cream or 0% Greek yogurt
  • salt (to taste)
  • pepper (to taste)
  • 2 Tbs Baking Blend or Almond Flour
  • 1 bag of cauliflower (12 oz), cooked and chopped up a bit.
  • 1 1/2 cups cheddar cheese, on top
  • mushrooms, optional
Directions: In a small pan, saute' the onion in the TBS of butter and set aside.  In a pot, cook the cauliflower until tender, than drain and chop any large chunks up.  Cook the ground beef in a skillet.  When the ground beef is cooked, drain the extra fat off and return to the pan.  Add stock, garlic, sauteed onion, seasonings, sour cream, cooked cauliflower and flour to the meat mixture.  Stir and let it simmer for a few minutes.  Incorporate it well. Add a bit more beef stock or a little water if you think it's too thick.  It doesn't thicken up a lot as it bakes, so if you want it thicker, add more flour or even a pinch of Gluccie would work. When its well cooked and thickening a bit from the flour, pour into a 9 by 9 baking dish.  Top with cheese.  Bake at 350 for about 20-25 minutes.  I like to broil it at the end to brown up the gooey cheese! *Note:  I honestly think you could use 2 cups of a few other veggies if you don't have cauliflower.  Chopped zucchini, broccoli or yellow squash would also taste great! (or a combo of those.)

I served my dish with a huge kale salad with my favorite homemade dressing, Tangy & Sweet Vinaigrette!  You could use ranch or another low carb dressing.  This serves 4-6 servings.  You can easily double it for more folks.       I don’t, Pam. I don’t count fat in my S meals. (or low-carb meals) All of my meals marked at E or FP meals are 5 grams or less of fat.

    I am making this for supper tonight. Wasn’t sure how to thicken it up with adding carbs. Then I remembered I had bought baking mix. I added 2 TBS. It came out perfect. When I saw this recipe I was kinda proud of myself for doing it right, lol. It’s delicious.

    I’ll be using fresh mushrooms. Should I sauté them with the onions?
