DSC_0002I love Mexican food!  Yes, I do!  A friend of mine was making a chicken enchilada recipe into a THM friendly recipe.  It gave me the idea to try to make one of my own!  Boy, am I glad I did!  This will be a favorite around here!  It was easy to throw together!  There is nothing better than a healthy meal that everyone can enjoy or that you can take along to a potluck dinner!  You could serve a side salad along with this to get some good veggies in your meal!

Cheesy Chicken Enchiladas (S)

Low carb tortillas (I used LaTortilla Factory) 3 net carbs!!

1/4 to 1/2 cup of onion, diced

4 chicken breast or a can of shredded chicken

1 can of green chillies

1 stick of butter

1 cup of sour cream

1 cup of Colby jack cheese + 1/2 cup more for the top

1 tsp of cumin

1 tsp of chili powder

1 tsp of minced garlic

salt and pepper

Cook your chicken in the skillet with some butter or you can use canned chicken like I did. The canned chicken made it one step easier.  Shred it if you cooked your chicken breast.  I mixed 1 cup of cheese in with the chicken.  I used 6 tortillas. I put this filling into the tortillas, evenly.  I wrapped each one up nicely and put them face down so they would stay shut. In a saucepan, place the butter, sour cream, cumin, chili powder, salt, pepper, green chilies, minced garlic and half an onion.  Heat until the butter is melted and the mix is smooth.  I poured this mixture over the tortillas.  I topped the tortillas with extra cheese.(about 1/2 cup)

I used a 9 by 12 glass baking dish.  350 for 30 minutes! I ate two enchiladas for my meal.  I had a side salad as well.  I try to keep store bought carbs at 6 or under for a meal as the book suggests! This could serve 4 depending on how much your family eats.  You could possibly spread the mix between 8 tortillas and stretch it out!  This is so yummy!  We'll have leftovers for my lunch this week.  You could put a little salsa or sour cream on top if you want. My inspiration for this recipe was my dear friend, Angel.  She used some lavish bread for her wraps in this recipe.  She kept it at 1/2 a piece of Joseph's Lavish per person.  She used another can of chilies and more of the spices listed.  You can really make this recipe your own!!   Just wanted to throw that idea in there as well.     I would totally eat this! Looks SO tasty!
    One question, though. What size was your can of chicken? I have sme but don’t think one can of mine would equal r4 chicken breasts of meat… maybe 2. (They are the size of the large tuna can.)

        I don’t know if this has been mentioned, but these freeze really well. Last time I made them I doubled and tossed the second pan in the freezer. Thawed and baked them today. Just as good and hardly took any longer to make two! Had to share!

    I made these tonight. They were the BEST chicken enchiladas I’ve ever made. EVAH. I posted the link on the fb THM page. Hope that was okay with you!!! 🙂 I have to find the tortillas you are talking about. My Walmart and Kroger didn’t have them. So I only got to eat one because my tortilla had 6 net carbs. I stripped the guts out of a second one and ate it that way. LOL This is definitely going to be a rotating meal in this house. YUM.

    Our family just devoured Cheesy Chicken Enchiladas! Everyone loved it, even kids (13-2)! I had leftovers from Gwen’s Garlic Chicken that I made this weekend, so that made this super easy and cheap! This mama likes!!!!

      That’s tough…..I’m not sure! I’ve not been eating those items either, but I’ve not tried to replace them yet.
