I often find recipes online and think, "How can I make these THM friendly?".  Yesterday was no exception!  I found a great recipe for zucchini cakes online that had bread crumbs so I took some notes and came up with my own version. Pre-heat the oven to 400 degrees! Shred one zucchini in to a small mixing bowl!  Not the monster ones...one normal sized zuc!  After you shred it, try and squeeze out as much juice as you can!  I added one egg and italian seasonings to your liking.(about 5 shakes)  Salt & Pepper.  Now add in the cheese!  Parmesan would be the ideal!  I only had some mozzarella so I added in a half cup.  I can't have breadcrumbs or Panko in my dishes so I did the next best thing!  The book suggest Joseph's Flax Oat Bran & Whole Wheat Pita Bread to make sandwiches and other fun recipes.  They are VERY good!!  In this recipe I took the pita and put it in my food processor to grind it up.  I used it in place of bread crumbs!  Don't freak out that they are hard to find...I get mine at Walmart in the deli area. Dump the pita crumbs in the bowl and mix it all together! I lined my pan with parchment paper and sprayed it with some non stick olive oil spray. I formed my zucchini mix into 2 inch balls.  After putting them down on the sheet I then took a glass jar and pushed each ball down to be flatter, like a disk. I baked them for 15 minutes on one side and then flipped them over.  I baked them an additional 5 to 8 minutes to brown the other side. I thought they were very yummy!!  I want to try them the next time with fresh parmesan cheese.  I know that will be very good too!  I am sure you can experiment on your own and add different flavors of your choice!  Enjoy these as a nice side dish or as an appetizer!   This should make about 12 small cakes! DSCN8760   Zucchini Cakes 1 Zucchini (shredded) 1 egg 1/2 cup Mozzarella or Parmesan cheese Italian Seasonings Salt & Pepper 1 Joseph's Pita (ground) 400 Degrees for 15 minutes.  Flip over and bake an additional 5-8 minutes or until the other side is browned.     How much zucchini? I don’t know what a normal size would be. I only have the monster ones coming out of the garden😳

      Oh boy..this is a super old recipe and I don’t remember what all I did! I guess my “normal” would be 6-8 inches long! I need some monster zucchini…mine aren’t doing well this year. 🙁
