The new Trim Healthy Mama Baking Blend is a real hit!  Gluten free families are rejoicing from the rooftops to have a baking mix they can use safely at home.  It is really that good, folks. megamuffin1I could make 10 different Mega muffins and keep sharing a new recipe with a small tweak, but decided to just share a basic muffin with you that you can make your own!  Add berries, Lily's Chocolate Chips, etc to your own liking.  You can make this an S or an E with easy switches, so I'm giving you options! Ingredients for Basic S muffin: You choose: (S muffin)
  • 1/4 cup blueberries
  • 1/4 cup mixed berries
  • a serving of 60 Lily's Chocolate Chips
  • 1/2 tsp cinnamon
To make this an E recipe:
  • use 1/4 cup egg whites instead of the egg.
  • use 1 tsp of coconut oil or butter.
  • add 2 Tbs of unsweetened applesauce instead of water. (my preference)
  • add an E fruit like peaches, apples, pears or bananas. (1/2 chopped banana or 1/4 cup or so other chopped fruit)
  • You CAN use Oat Flour(ground oats) instead of THM Baking Blend in an E recipe evenly.
  • With all those E fruits, I'd add some cinnamon to my batter.
Fuel Pull:
  • Basic muffin as is with 1 tsp of coconut oil
  • Use water instead of applesauce
  • Egg whites
  • Use a flavoring or extract you like..almond, vanilla, etc.
  • Use 1/4 cup of berries.
  • Make a cinnamon muffin.
  • Use your own imagination on spices or extracts.
Directions: Mix it all together vigorously and pour it in an oven safe or microwave safe bowl.  I prefer the texture of the oven myself.  350 for 15 minutes.  From there it depends on the oven and what type fruit you've used.  Keep an eye on it until it's done. An E Banana Muffin took me the longest at 20-23 minutes or so.  If you use a microwave, start at 1 minute and 20 seconds and go up from there!  The Banana took me 2 minutes and 30 seconds.  It's the most moist and takes the longest in my opinion. I hope this gives you a variety of ideas to try!  This makes one BIG muffin or you can make three normal size muffins.  Double, Triple or Quadruple it and you can have larger batches. I made a bunch of Banana Muffins and you can always check out that recipe to see how I multiplied it for a batch. If you don't have the Baking Blend you could try a mix of coconut and almond flour as a replacement.  I've not tried it myself, but some are doing well with that.  I find that subbing Oat Flour in E recipes works out great!  Just a note for those that will ask. Printable:  It won't let me do separations between fuel types, so if you print it off, read closely.

    I made the Banana muffin recipe in a reg size doughnut pan. It made three and they were delicious! (I just opened a brand new container of baking powder from Sam’s Club, and I could taste it in the doughnuts–next time, I’ll use 1/2 tsp). It’s so rare that I find a recipe that is ready to use, sans many adjustments–thank you!

      If you use the 1 tsp of fat…and berries..yes. If you add fat or any other fruits it won’t. Nice idea! 🙂 I may add that plain jane…it’s a FP.

    Jenn, I just noticed that you left out what temp to bake your muffins at in Step 2. You probably have corrected this already, and it’s probably 350, but I just wanted make sure you were aware of this. Thanks for ALL of your great recipes!

    Jennifer, I used your S muffin recipe and made butter pecan rum cake with a butter rum sauce. First, I doubled the recipe. I replaced the three tablespoons of water with dark rum, but still added the 1 tablespoon of water. (Total 4 tbsp of liquid) Added 1/4 cup chopped pecans. Baked in oven for 18 minutes at 350 degrees.

    While it was cooking I made the sauce: 3 tablespoons melted butter, 1 tablespoon of THM Sweet Blend, 1/4 cup heavy cream, 1 teaspoon vanilla, and 1 teaspoon of rum. Melt butter in small saucepan, slowly add cream to butter until cream is warm. With a whisk blend in sweet blend, vanilla, and rum.

    Serve over cake. This tastes a bit like bread pudding. The texture of the cake is great.

      No..it’s not. I’m mot sure those type ratios have been figured out yet since the Blend is pretty new.
