Recently I went to a Wood Cutting Party at some friends house.  Yes, it is what it sounds like!  We help our friends cut/split/stack wood for the winter. My friend, Crystal is super industrious and has very healthy view on baking and cooking for their home.  She introduced me to BUCKWHEAT FLOUR!  She buys HUGE bags of it and uses it to make many things in their home. She grinds it herself at home. She made these little buckwheat cakes over the fire in a cast-iron skillet.  I did have some that day, though I knew it was a Crossover cooked in the olive oil.  She feeds them to her children with raw honey on them.  Here is some Buckwheat:   I was recently challenged to go Gluten and Diary Free on top of Trim Healthy Mama for a while to see how I do.  I have multiple health issues going on and I'm trying all I can to find answers so that I can feel better.  Just another part of this journey I'm on.  I thought of Crystal and her buckwheat and decided to buy some today!  I came home and threw things together in a bowl and prayed it would work out.  Buckwheat isn't a big fluffy pancake.  It's a bit flatter.  I didn't have any sprouted whole wheat flour to mix in with it to try for a fluffier batch.  Some of my THM buddies add one scoop of Pristine Protein Powder to their pancake batter for more fluff and added protein!  I honestly liked them with all buckwheat flour.  I just had to get used to a different texture than I was used too. 6a00d8341c9adb53ef014e88bd2f43970d-piI know this won't be everyone's cup of tea, but if you are Gluten Free or like trying new kinds of healthy flours, you might!
Cinnamon Buckwheat Pancakes (GF/DF/SF) THM-E

Serves: 1 serving
Nutty Brown, Cinnamon Pancakes that are Gluten free/Dairy free/Sugar free!
Ingredients
  • 1/4 cup buckwheat, sprouted
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp. THM Sweet Blend
  • 1/2 tsp of Cinnamon (depending on your taste..add more or less)
  • 2 Tbs unsweetened applesauce
  • 3 Tbs of egg whites or the egg whites of one egg
Instructions
  1. Sprout your buckwheat, dry and make into flour. Mix the ingredients well in a bowl. Heat up a pan and spray lightly with cooking spray. Cook up the pancakes!
 
This is one serving!  You could easily double or triple it to feed more folks.  Nothing flashy or fancy, but nutritious!  I drank a Fat Stripping Frappe' with mine (page 240) for added lean protein to keep me satisfied.  I ate a small apple on the side as well to add more E fuel.     This looks so good. Do you think I could replace the sprouted buckwheat flour with sprouted whole wheat flour? Would it be the same amount of flour in the recipe…and same amount of servings, do you think? Bought some ONE DEGREE brand sprouted wheat flour and would like to try them for pancakes..thanks!!!

      Hi Sheryl! I’d think you could try the sprouted wheat. I don’t know how different the consistency would be. I’d think you could tell by how the batter looks in it’s consistency. 🙂

    WOW! These are AMAZING! I added 1/2 T cocoa, and 1T chocolate protein powder. I had it with Greek yogurt & cocoa and some warmed frozen strawberries. Thought I was in heaven.
    I think next time I will just toss the whole batch in the oven and make “cake”.
    I could easily have 1/2 this recipe as a snack or E dessert!

    If I have sprouted buckwheat flour, can I sub a 1/4 cup of that and skip sprouting, drying, grinding my own flour? I’m not that patient…. =o(

    I couldn’t find anything other than buckwheat flour. I assumed it’d be about the same. I used the 1/4 cup. The batter was very thin. The pancakes were very flat. When I got a taste of cinnamon, it was good. Otherwise they were bland. I had them plain. I’m very new to gf. Is my problem the flour, being so new, eating them plain, all of the above? Thanks!
