I really enjoy making desserts for ONE.  Yes, I love my full serving cakes and desserts as well but, it's nice to pull a small dessert together for an afternoon snack or even breakfast! Trim Healthy Mama is the yummiest plan I've truly ever been on out of the myriad of plans I'd tried since I was a kid.  I can EAT! parfait Looks yummy, huh? It is!!  What I enjoy doing on THM is creating something that you can make a few different ways. The first version I'll share is an E. I like to keep foods in categories, just like Pearl and Serene suggest in the book. I don't try to fit foods into categories that they don't belong.  Counting numbers isn't fun for me as I LIVED it in the past.  I'm so thankful to be away from it now. To find the wonderful THM Sweet Blend or other sweeteners visit the website!  Their new sweeteners are GMO Free and Organic.  They are by far my favorite on plan sweeteners! I use the Sweet Blend in the recipe below.
Fruit Parfait- A Few Ways! (FP & E)

Fruit Parfait
Ingredients
  • 2 Tbs THM Oat Flour
  • 1 Tbs coconut flour
  • 1 tsp coconut oil
  • 1 egg equivalent egg whites
  • dash salt
  • 1/2 tsp vanilla
  • 1/2 Tbs THM Sweet Blend
  • 1/2 tsp baking powder
  • 1 Tbs water
Instructions
  1. Mix all together and cook for 1 minutes in the microwave...check it and if it's still wet, cook for a bit longer. Top with warm fruit and greek yogurt(nonfat).

    New to THM but 44 g of carbs?? and 11 of fat how is this fit in the low cab part of THM?

      Those nutritional facts really aren’t correct. I’d ignore them. It fits and E and a FP if you follow my instructions. I have a new recipe builder now and don’t use that one. It doesn’t subtract fiber for one and many other things that THM teaches.

          I don’t use any recipe builders. Most are charging for THM recipes and without permission. 🙁 THM will have their own out very soon.

      Yes! You sure can! 🙂 I even use 2 tbs of ground oats and one tbs of whole oats. 🙂

    How much fruit do I use. I haven’t made it in a while but enjoyed this, especially when I don’t have time to cook a batch of pancakes.

      I’ve never really paid too much attention except for if I wanted it to be a FP or and E. 🙂 I use E fruits for that like peaches, etc and for FP…berries.

      No…this recipe got deleted long ago and I didn’t retype it quite right! For a FP, use Baking Blend instead of Oat flour. Same amounts.
