Ya'll know I like my mug recipes!  I've got a bunch of them.  Well, today I think I made my new favorite.  I was a happy, Trim Healthy Mama.   I took my core muffin recipe and just added some cinnamon and walnuts!  The topping was new for me though and much lower in fat than my normal butter and cream cheese!  Yes!

Cinnamon Walnut Muffin in a Mug (S)
  • 1 egg
  • 1 Tbs. of coconut oil(melted)
  • 1 Tbs. of water
  • 1 Tbs. of 0% Greek yogurt
  • 1/2 tsp. of vanilla
  • 1/2 tsp. of baking powder (aluminum free)
  • 1.5 Tbs. of coconut flour
  • 1.5 Tbs. of flax meal
  • 1/2 Tbs. of THM’s Sweet Blend (or 1 TBS. of Truvia)
  • cinnamon..I did like 3 shakes
  • 1 Tbs. of chopped walnuts ***Instead of the flax and coconut flour, use 3 Tbs of THM Baking Blend!
Mix it all together vigorously! (I consider it part of my workout!)  I bake it in the microwave for 1 minute and check it.  If it's a little wet on top I do about 20 more seconds!  You don't want to over bake it!    If you enjoy the oven for baking, 350 for about 12 minutes .  Mine bakes HOT so I'd check it sooner. For the topping, I did something new and LOVED IT!!!
  • 1 wedge of Light Swiss Laughing Cow Cheese
  • approved sweetener
  • two shakes of cinnamon
I mixed it together really well and spread it on the top of my muffin when it was baked.  I LOVED it!!!  My go-to topping before was:
  • 1 tbs. of butter
  • 1 tbs. of cream cheese
  • approved sweeter
  • drop of vanilla
Mixed it together well after I warmed it for 10 seconds in the microwave.  It's very yummy as well!  So, now you have two options!  I've also used sweetened greek yogurt on top! 🙂 I hope you enjoy this recipe as much as I did!  I felt like I was eating a cinnamon roll...well, a healthy one! Cinnamon Walnut Muffin in a Mug is an easy, one serving treat.
Ingredients

    Looks great! I am still new to THM and loving the results so far! One question, as I’m picking up ingredients as the budget allows… can I sub oat or almond flour for the flax meal? I have coconut, oat and almond flour. Seems like every time I find a new recipe to try, it has one ingredient that I haven’t gotten yet. 🙂

      I’d probably do about 1/2 cup of coconut in it’s place of the flax…it takes up more moisture. 🙂 That’s my best guess…you could do 2 cups of almond, I’d guess as well. I’ve note tried it any other way yet! 🙂

    Oh my gosh! This is so good! It’s taking all I have to not make a second helping. I added what coffee was left over in my cup to mix my frosting. Yummo!!

    I have one constructive comment: List the ingredients with the dry ingredients first so that first time users and rewriters of the recipe don’t have to use 2 different tablespoons or wash in between scoops of wet and dry.
    I have given this recipe to several people and keep forgetting to reorder the list myself when writing. My pretty recipe cards thank you in advance. hahah!
    this is truly a delicious recipe. Also, kefir works in place of the greek yogurt.

    I love this and love trying it new ways. I sometimes use pecans. Sometimes I leave out the nuts and replace the vanilla with almond extract and then put a smear of peanut butter on the hot muffin. That is my favorite way!!!!
