This salad is so simple and easy to put together, yet packed with nutrition and taste!  That makes me a happy girl when I'm feeding my family.  I thought maybe this was too simple to share, but decided to write it out anyways.  I often use this as a side salad when I'm a bit tired of lettuce.  I'm going to share my single serving recipe, but you can double, triple or quadruple it easily for the family or friends. adocadoveggiesalad Ingredients:
  • one small cucumber or half of a large one, chopped
  • 1/2 an avocado, diced
  • a few grape tomatoes, cut in half
  • 2 small bell peppers, or half a bell pepper chopped
  • 1 Tbs Tangy and Sweet Vinaigrette 
  • Salt
  • Pepper
Directions: Chop up all the veggies as I described above.  Hopefully the picture helps you see the size amounts I used in case you are confused.  This is a simple dish.  If you want to add bacon pieces you could.   Cheese, well that's up to you too.  I'm sure a sprinkle of cheddar would be nice. Amp it up!  Add 1 Tbs or so of the Tangy and Sweet Vinaigrette.  It's linked here or in your Trim Healthy Mama Cookbook on page 472. Toss it together and serve. My veggies sizes for reference: veggies You could easily take this to a get together if you multiply the recipe.  It's so easy to throw together and I think most folks would enjoy this combo of flavors.
Avocado & Veggie Salad with Tangy/Sweet Dressing

Simple salad for anytime of the year!
Ingredients
  • one small cucumber or half of a large one. My cucs are about 4 to 5 inches long.
  • 1/2 an avocado, diced
  • a few grape tomatoes, cut in half
  • 2 small peppers, or half a bell pepper chopped.
  • 1 Tbs Tangy and Sweet Vinaigrette
  • Salt
  • Pepper
Instructions
  1. Chop up all the veggies as I described above.
  2. If you want to add bacon pieces or a sprinkle of cheddar would be nice. Amp it up!
  3. Add 1 Tbs or so of the Tangy and Sweet Vinaigrette. Its on page 472 of the THM Cookbook.
  4. Toss it together and serve.
