The leaves are starting to turn from green to beautiful jewel tones in the great state of Ohio. When I was little I never enjoyed the "Fall Leaf Drives" my mom took us on, but now they are one of my favorite things to do with my family.  Amish Country in Berlin, Ohio and the surrounding countryside is one of our favorite places to visit when the Fall foliage in full view!  So stunning... My heart and taste buds turn towards different flavors as those leaves turn.  There is just something about cooling temperatures, bonfires and shortening days that lead me to spice, apples, pumpkin, cranberries, cinnamon and gingerbread flavors.  I'm positively sure that I'm not alone in this. This muffin screams Autumn with each bite. everythingnicemuffinIngredients:
  • 1/4 cup THM Baking Blend
  • 1 tsp baking powder
  • dash of salt
  • 1 tsp vanilla
  • 1/4 cup egg whites
  • 1Tbs THM Sweet Blend or Brown Sugar Sweet Blend (recipe)
  • 2 Tbs of water
  • 1 tsp melted coconut oil (or butter if you can have dairy)
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • pinch ground clove
Instructions: Preheat the oven to 350 degrees. Mix the ingredients well in a small bowl with a fork.  Place in a baking tin or oven safe bowl.  I spray my tins well with cooking spray first.  You could use a muffin tin and fill 2-3 regular sized muffins if you don't have an pan that will work. 15-18 minutes at 350.  If you did muffins, the cooking time will be shorter!  Oven times may vary.  You can use the microwave if you must!  I'd start at 1 minute and go up from there by 20 seconds are so.  (peek at it)  I MUCH prefer my muffins and cakes in oven.  They just taste yummier if you ask me. *FP Notes- This is a Fuel Pull muffin as written above.  You can use this with any fuel type meal or snack!  That is my favorite kind of treat.  Enjoy with some lean protein, like 0% Greek yogurt that is sweetened with an on plan sweetener and some vanilla.  So delish! *E Notes- If you don't have Baking Blend, you could use Oat Flour in equal amounts.  This would be an E muffin in that case. It tastes great!  You could add chopped apples to this recipe to make it an E as well no matter which flour you choose. *S Notes- If you decide to eat this with an S or want to make it an S muffin, you can do that as well.  Use a full TBS of butter or coconut oil and one whole egg in the recipe.  Pictured above is my "S" version because I added a yummy cream cheese frosting to my fuel pull muffin.  So good! FROSTING for my S Recipes: 1 Tbs cream cheese, 1 Tbs of melted butter, vanilla, sweetener.  I melt it a bit in the microwave so it blends well, and it makes my favorite icing for my "S" cakes or muffins. I've had many requests and questions about the pan I've been using in my MEGA muffin recipes.  I'll be really honest, I bought two of those adorable pans at my local thrift store for .25 cents a piece.  Score!  This pan that I'm linking to is the same size and very similar.

Spice filled muffin that is sure to satisfy your cravings for fall baked goods.

    Just made these tonight! YUM!!!! I added a little maple flavoring to my Greek yogurt to go with the wonderful fall spices in the muffin. Delicious!!! I love that it can be FP, E or S. I really appreciate that about your muffin recipes. Thank you, Jennifer!
