It's Fall Ya'll!  (I totally faked that accent!)  It's the pumpkin-spice and everything nice time of the year.  I woke up today and wanted some pumpkin somethin-somethin for breakfast.  One of the boys and I are eating dairy and gluten free at our house.  I was hunting for a dairy and gluten free pancake that tasted good and came across my friend Tina's site, Oil of Joy. (use gluten free oat flour or ground oats) I looked over her recipe and had a bright idea to come up with a Pumpkin Waffle!   Gals like Tina have made transitioning easier for me when stepping into food allergens.  Trim Healthy Mama has some fantastic allergen Admins!

This pretty shade of a waffle was the result and I was pretty pleased.  It's not chewy and crisp like a waffle, but a bit softer.  I honestly like using my waffle maker whenever I can.  Muffin in a mug recipes, omelets, pancakes...they all work like a charm in a waffle maker. Easy clean up, folks! Ingredients:
  • 1 egg
  • 1/2 cup THM Baking Blend
  • 1-2 doonks of THM Stevia or an on plan sweetener of your choice
  • 1/4 tsp cinnamon
  • 2 Tbs Pumpkin
  • 1/2 Tbs Baking Powder
  • pinch of THM Himalayan Mineral Salt or mineral salt of choice
  • 1/2 cup unsweetened almond, coconut or cashew milk OR water
  • 1/2 tsp vanilla
Directions: I simply mixed them together in a bowl and poured it into my waffle maker.  I had to spread it around evenly as it's thicker.  I'm sure you could make pancakes as well.  I haven't tried pancakes, so I cannot say as to how these will turn out if you make them that way. This recipe above is an "S" on the THM plan. I snuck some butter on my waffle since I made an "S" version.  Don't tell my son!  I bought him a Soy free, Dairy Free butter spread that he thinks IS real butter, Earth Balance.  That's a personal choice in using that Spread, it doesn't have all on plan oils in it.  I use it at my house, but you certainly do not have too.  Eat some good protein on the side to keep you full.  A nice protein shake, side of eggs or some turkey bacon would be nice. Pick your favorite! E Recipe: You could use Oat Flour (gluten free ground oats) in place of the THM Baking Blend.   I've found I can swap those two ingredients pretty evenly in recipes. You can still use the Baking Blend in the "E" version as well. Oat Flour is just an option.  Then use 1/4 cup egg whites in place of the egg.   Easy swaps. I'd eat some fruit on the side or use a bit more of a carb source with this to make it a solid E.  An "E" protein shake would be a fun idea! That will give you more carbs and protein in one punch. Don't forget that lean protein. FP Recipe: Use 1/4 cup egg whites in place of the egg and stick with the THM Baking Blend. Add some lean protein so you stay full longer!

Pumpkin Waffle for a nice fall, breakfast! Sugar free, low carb, Gluten free, and dairy free! THM friendly with instructions for any fuel type.
Ingredients
  • 1 egg

  • For FP- Use Baking Blend and 1/4 cup egg whites in place of whole egg.

Gwen's yummy Stevia Syrup Recipe is a Fuel Pull and would be yummy on any fuel you make of the Pumpkin Waffle.  I can't do without Syrup!  If you must, there are some Sugar-free syrups at the store.  Just watch the ingredients.     Your recipe lists 1/2 TBLS — just checking before I make it

    I made these but was disappointed that even after spraying my waffle maker, they stuck all to the machine! Shouldn’t they have oil in the recipe?

      Not sure what to tell ya. It’s a FP recipe so it is 1 tsp at the most. If you want to add more oil, you could try that. I sprayed mine lightly, but it didn’t stick.
