Single Serving recipes are a favorite of mine. One reason is because I can try something to see if I like it before I use up any of my favorite THM ingredients in a large batch!  Some folks are also on plan on their own at home or are single and don't need big amounts. So, I love doing single servings for me and for many of you who enjoy one portion. I'm going to post up a bigger recipe next week for a batch of muffins. megabananamuffinThe new Trim Healthy Mama Baking Blend has seriously changed my life in the kitchen!  I may be a bit dramatic about it, but let me tell you it's good stuff.  For a gluten free girl, a dream.  The fact that it's a Fuel Pull and can go in any setting is wonderful as well.  I have made some of the best muffin in a mug recipes in the past week with The Blend.   This new muffin is my favorite so far.  I have never had a more moist and delicious Energizing muffin yet!  To kick it up a notch, I added some Peanut Butter Glaze over the top made with THM Peanut Flour.  If you don't love a banana and peanut butter combo, it's just as scrumptious without. Ingredients:
  • 1/4 cup of egg whites or carton egg whites
  • 2 Tbs. of unsweetened applesauce
  • 1/4 cup of THM Baking Blend or 1/4 cup oat flour(ground oats)
  • 1 Tbs of THM Super Sweet Blend or 2 Tbs of Truvia
  • 1 tsp of vanilla
  • 1 tsp of coconut oil or butter(soften the butter)
  • 1 tsp of baking powder
  • pinch of salt
  • 1/2 a banana chopped in little pieces
  • 1/4 tsp of cinnamon
Directions: Add the wet ingredients to a small mixing bowl and stir them together.  I then added the dry ingredients and mixed well until it wasn't lumpy.  Lastly, I added the chopped banana.  You can use 1/3 to 1/2 a banana in this recipe. I used 1/2 of a banana and it wasn't even an over-ripe banana.  I chopped it up small.  I baked mine in the oven at 350 for 20-23 minutes.  I used a cute little pan I found at my local thrift store.  You could try another muffin size pan, but this was a bit bigger than a normal size muffin pan. If you use a muffin pan, you may want to split it into two muffins so it doesn't spill out.   You could try the microwave, but I'm sure it will take a bit to cook.  I'd start with 2 minutes and keep my eye on it. The glaze- 1 Tbs of Peanut Flour, a little unsweetened almond milk and some THM Sweet Blend.   I just mixed it together and poured it over the top.  Water may work as well.  This is just optional, but I liked it. I hope this gives you a new E option for a snack or for breakfast!  Just pair it with some extra lean protein.  If you can do dairy, some 0% greek yogurt would be nice.  Without dairy, I often do a Fuel Pull style protein shake with my E's if I don't want to eat some lean meat. Options:  Some will want to know what to try instead of the Baking Blend.  I have NOT tried this recipe with another flour.  I will assume you can try 1/4 cup of oat flour.  You can give it a shot if you want to try it.  Oat flour is simply ground up oats made into flour and can be used in an E setting. Note:  Bananas are fine in a E setting on THM.  Stick to 1/2 or less of a banana.  It's a nice occasional treat in muffins, cakes, etc. Looking for other recipes to try using the new THM Baking Blend?  I have a few others that I hope will try!         There are baking blend recipes on the internet. I googled it and there is one with the same ingredients as listed on the THM baking blend bag. I can’t remember the blogger, but she tested hers with a recipe and she made the same recipe with theirs and showed photos and they looked just the same. I make my own with that recipe all the time. I only ordered the THM baking blend once. You save at LEAST $1 a bag making your own, plus the shipping (which is really expensive!)

          Thats Nili barrets recipe. It’s the best baking mix I ever tried, I sub protein powder for the collagen though, because it’s to expensive, and it still works great

      Yes! It’s just as nice with all oat flour! I use oat flour a lot now in muffins that are “E” when it calls for Baking Blend.

    MINE was like cake at the ends and inside was like a pudding not cake texture….i baked it longer too…I like the taste and the sides just not the center what can i do to make it like a cake thanks a lot

    This will sound silly but since it serves 1, (I have never seen a 1 muffin pan before) I have a bunt muffin pan that makes 6. So I am assuming if I want to make 6 at a time I need to X6 all the ingredients or does this mess up the recipe?

    as a person with nut allergies, I can’t follow the easy path of using a blend. Glad someone stated they can use the oat flour, that helps. Please remember us with allergies to nuts when you can, we like new recipes too, thank you
