Who doesn't like ooey, gooey cheese, butter and bacon? I don't want to beat around the bush...this is so good!  I make a Loaded Cauliflower Casserole that we've enjoyed at home for two years now, but spaghetti squash is more of a "new to us" veggie.  I've had it at church potlucks, but I'd not bought one to try myself.   WHAT WAS I THINKING?  It was so easy to make and delicious! loadedspaghettisquashFirst off, I cooked it all day long in the crock-pot that had our chicken breasts cooking.  I had put about two inches of chicken broth in the bottom of my crock-pot, 4 chicken breasts, salt, pepper and 1 Tbs of minced garlic.  Nothing at all fancy!  I had seen a gal on the Trim Healthy Mama page who cooked hers in the crock-pot this way and being the Drive-Thru Sue that I am, I had to try it!  I was amazed.  It came out soft, tender and yummy.  I didn't do a thing but cut it in half and stick it in the crock-pot. If you don't want to cook it that way, you can bake it in the oven.  Just cut the spaghetti squash in half and place it in a baking dish on 350 for 35-45 minutes.  I know some even bake it in the microwave "gasp".. so it's up to you! After I cooked my spaghetti squash, I pull all the yummy "spaghetti" out of the shell.  Wow, did it come out so easy after cooking all day!  I filled my glass pie plate very full with just half of a squash.  So, it really depends on the size of your squash as to how much you'll need.  I filled my baking dish up to one inch from the tippy top.  I then did dump it into a bowl to mix the other ingredients in so I didn't make a huge mess while stirring! (I had about 4 cups of squash.)I'm a messy cook. In a large bowl- mix about 4 cups of squash, 3 Tbs of melted butter, 1/3 cup of heavy cream, 1/2 cup of sour cream, cream cheese or 0% Greek Yogurt, 1/2 cup of cheddar cheese, 1/8 cup of bacon pieces or turkey bacon chopped, salt and pepper. I then placed it in a casserole dish or glass pie plate.  I put 1/2 cup more of cheddar cheese on the top. Bake at 350 for 25 minutes.  I like the top of mine to brown up so that's what I look for...bubbly brown goodness!  That's it!  This is an Heavy S, so you don't want to eat it every day of the week. * You COULD make this a full meal by adding a pound of cooked ground beef or chicken!  YUM! squash2Printable:

Ooey, Gooey, Cheesy goodness! Spaghetti Squash has never been so yummy!
Ingredients
  • Spaghetti Squash(I used half a large squash) (about 4 cups)
  • 3 Tbs butter
  • 1/3 cup heavy cream
  • 1/2 cup sour cream, 1/2 cup cream cheese(soft) or 1/2 cup of Greek 0% yogurt
  • 1/8 cup bacon pieces or chopped turkey bacon
  • 1 cup cheddar cheese (reserve half)
  • salt
  • pepper
Instructions
  1. Bake Spaghetti squash until tender and scoop out the "spaghetti.
  2. In a large bowl mix all the ingredients, minus 1/2 cup of cheddar cheese.
  3. Mix well and place in a pie plate or 9 by 9 casserole dish.
  4. Top with remaining cheese.
  5. Bake at 350 for 25 minutes or until bubbly on top!

    sounds amazing, but by the looks of the heavy cream, sour cream and cream cheese, I’m hesitant to make it. Can you give me total fat? And saturated fat?

      Sorry Cathy, I don’t know. On THM we don’t fat in our S meals. I mention in my post that this isn’t something to eat daily. You can sub Greek 0% for the sour cream if that helps. 🙂

    I cook my squash in the microwave all the time. I put it in whole for one minute (make it easier to cut) then cut it in half and scoop out the center seeds. Place on large plate cut side down and cook 4-5 minutes. Use hot pad to hold on to one of the halves and scoop out the squash in shreds. Then do the other half and use as above or however you want.

    Spaghetti squash is supposed to be a healthy dish. Which is probably why I don’t like it. lol! One of the very few veggies I don’t care for.
    Since it’s good for you, I keep buying it anyway in the hopes that I will find a recipe I like. I think this may just be “the one”. Likely because with all that cream, cheese and bacon it really isn’t such a healthy option anymore.
    Grocery day is Wednesday…guess what will come home in my cart?

      Scrumptious, made this tonight and we loved it! Added an egg and some sauteed onions, garlic, red pepper flakes and chopped kale from the garden for a one-dish meal with protein and veggie.

    Is there a way to make this an “S” rather than a “heavy S”? I’m new to THM and would love to make this just an S. Thank you. This sounds delish. What else could I have with this to make it a complete meal?

      Hi Roxann! Welcome to THM! I think this would be VERY tough to make a Deep S recipe. Deep S uses good fats like butter or coconut oil, but not the heavier cream cheese, cheese, etc. It would be pretty much using just the squash, butter and bacon in this recipe. It’s a nice indulgent treat for some meals. My favorite Deep S is green beans sauteed in butter with garlic and bacon pieces. YUM.

    I made this recipe this week, and it was AMAZING!!! Probably my FAVORITE casserole!! Oh my ~ I cannot thank you enough for sharing it and for listing out how to make it, step by step. I took your advice and added ground beef to “up” the protein content. (It was actually taco meat–a great way to use up leftovers from the night before!) My husband even loved it!! I thought for sure I wouldn’t like it because I am SO used to spaghetti casseroles–and I was a bit nervous about using squash. But it was SCRUMPTIOUS!! I showed the kids how squash turns into spaghetti and they thought it was marvelous 🙂 THANK YOU SO MUCH, JENNIFER!! I appreciate you sharing this with us!! High fives!

    Just made this with some diced ham instead of bacon and a big salad with a viniagrette, and it was a big winner on all fronts! Nice and quick, too, once your squash is cooked (we roasted ours), active prep can’t be more than ten minutes, perfect for a weeknight. We’ll be making it again for sure.

    This is the best spaghetti squash recipe I have ever tried. My 11 yr old son ate it up. It made plenty for leftovers, yum! I didnt add the bacon since I didnt feel like making it…It didn’t need it The only thing I will do next time is use greek yogurt for extra protein and less calories. and less cheese as I didn’t think it really needed it but as is it is a 10.

    Just made it tonight for a party (so I would know there was at least one low carb item there!). It was wonderful and many people commented on it being delicious. I effectively doubled the recipe since we cooked 3 haves and came up with over 8 cups spaghetti squash. I didn’t quite double the butter or cream cheese. Used a lot mroe cooked bacon though. Can’t wait to try it again with ham or chicken.
