This is one of my favorite snacks or breakfasts to share! This recipe was tucked away in a different post and felt it deserved it's very own spotlight! I have a love for refrigerator puddings, thanks to Trim Healthy Mama. I started experimenting with them on my own two or so years ago.  Some hot, some cold.  Some of my favorite THM goodies are quick mixes you refrigerate to enjoy later.  Warm Chia Porridge is where I got this version from.  It is certainly SUPER yummy warm, but I also enjoy it chilled more like a pudding.  Either way, it's a keeper for me.  So, now I bring you German Chocolate Chia Pudding.  This of course can be eaten cold or hot.  I think of it like a porridge if it's hot and more like a pudding if it's cold.  I know...call me crazy! chiapud2Ingredients for the Mix:
  • 1 cup unsweetened coconut
  • 1 cup flaxmeal/flax flour
  • 1 cup chia seeds
Store in an airtight container.  I keep this mix on hand to make up the Warm Chia Porridge or German Chocolate Chia Pudding.  The mix has enough ingredients to make up 8 servings. When you are ready for a serving of pudding/porridge:
  • 1/3 cup of the master mix. (above)
  • 1 tsp vanilla
  • 2 tsp Super Sweet Blend (THM)
  • 2 Tbs cocoa powder
  • 1 cup unsweetened almond milk (or another on plan milk)
  • Tbs of Pristine Protein Powder (optional)
  • Tbs heavy whipping cream (optional)
Add all of this to a mason jar or plastic container with a lid.  Shake, shake shake until it's well mixed and refrigerate.  I wait a few hours until it's nice and chilled to enjoy. germanchocpudThat's it!  Easy, huh?  It's very filling and I'd consider it an S recipe that is full of healthy fats!  You can leave out the cocoa if you want it plain or even replace it with Peanut Flour!  Oh yum.

Ingredients
  • Ingredients for the Mix:
  • 1 cup unsweetened coconut

  • For one Serving Add:
  • 1/3 cup of the master mix. (above)
  • 1 tsp vanilla
  • 2 tsp Super Sweet Blend (THM)
  • 2 Tbs cocoa powder
  • 1 cup unsweetened almond milk (or another on plan milk)
  • Tbs of Pristine Protein Powder (optional)
Instructions
  1. Add all of this to a mason jar or plastic container with a lid.
  2. Shake, shake shake until it's well mixed and refrigerate.
  3. I wait a few hours until it's nice and chilled to enjoy.
  4. The master mix makes 8 servings of the dry ingredients. Keep the mix in an airtight container until you are ready to use it.

    i just pulled this out of the fridge after chilling for 2 1/2 hours. it is very, very soupy. i know the chia pudding in the thm book (original) calls for gluccie. does this not need something to help thicken it?

      Nope, no gluccie. Mine is thick as can be…not sure what to tell you. Maybe leave it overnight and see in the a.m. Mine is thick if I let it sit for 10 minutes though and do it warm….

        it was definitely thicker this morning, but not as thick as yours appear in your pictures! i love the flavor and will definitely make it again. maybe i’ll try it warm today. thanks!

      It’s not a Deep S. :). Just an S. It’s thankfully not very heavy though.
