Ya'll....I am not Southern and I am talking this way.  I've gotta tell you about a brand, spankin' new Trim Healthy Mama product called Baking Blend.  It is off the chain!  I say "ya'll" because I felt like a Southern Mama cookin' in the kitchen tonight.  I made the yummiest Fried Chicken Tenders EVER!  They were so simple to make too.  On the THM website it says, "Finally a gluten-free, low glycemic baking mix that isn’t excessively loaded with fuel. The problem with most gluten-free baking blends is that they are usually too high in either carbs or fat." (source)  Talk about a dream come true for so many mamas.  I know it is for this Gluten Free girl!  It's only 1 net carb per serving (1/4 cup) and 3 grams of fat, which is so great for any fuel on the THM plan. friedchickentendersI made Pearl's Lemon Cake earlier today when I received my new goody in the mail.  It was so yummy!  I couldn't help myself and had to use it somehow in making our dinner.  It was chicken night, so I figured Fried Chicken Tenders were the ticket.  I was beyond pleased with the results. I am in love with this new kitchen staple. Ingredients:
  • 3-4 chicken breasts (cut in strips)
  • 1/2 cup THM Baking Blend
  • generous pinch of sea salt
  • a few grinds of cracked pepper
  • egg whites from two eggs or 1/4 or so of carton egg whites
  • 1 tsp of Cajun Seasonings (optional, but so very good)
You could use another spice in the place of the Cajun seasonings.  Perhaps you want an Italian flare!  You can use Italian seasonings.  You could leave it out all together and just have a basic breading.  I really loved the Cajun flavoring.  It wasn't overwhelming, but gave a very lovely kick to the chicken. I hope you'll give it a shot.    If you don't have an allergy to dairy, you could use some parm cheese in your dry mix. Directions: I used two small bowls (salad bowls) and placed the egg whites in one and the rest of the dry ingredients in the other.  I cut my thawed chicken in strips.  I then dipped them in the egg whites and then into the dry mix.  Put them in a sizzling hot pan of butter, coconut oil or palm shortening. (best at a medium heat on THM) I'd not want a coconutty flavor to this so an refined would be a good choice.  I browned it on one side and flipped them over and cooked until done!  Easy as can be!  I pan-fried mine in oil, so I stuck with an S meal.  This served 3 adults and one kiddo.  I made it stretch by serving green beans and some other side dishes, but there was plenty.  You can easily double this for a larger family. For an S:  You could use whole eggs instead of egg whites.  I liked whites for this.  Fry them in coconut oil or palm shortening and serve with S side dishes.  You could also use butter in frying. You could also use dark meat or light in an S setting. For an E: Use white meat that is lean, egg whites and bake!  350 for 20 minutes or until done. I cut mine thin so they don't take too long to cook.  Serve with an baked sweet potato, baked sweet potato fries or another E side dish. For a FP: 3 oz of  lean chicken, baked with little fat.  350 for 20 minutes in the oven.  Many yummy veggies fit in a FP setting.  Roasting veggies brings out such a wonderful flavor.

    So excited to try this recipe when my order comes! Thank you so much for posting this!!!!!! Does the baking blend measure 1:1 as a substitute for regular flour in recipes?

      No, it’s not 1 for 1 with regular flour. In MIM recipes it will be about 3 Tbs with a little added liquid. It’s texture is more like Bisquick or Jiffy Mix if that helps.

    I made this wonderful recipe today and loved, loved it. A question…mine came out a more dry crust than the picture of yours which looks moist and kind of wet. Did you use any extra coating or fry it slow to get the texture of the crust you have (which is what I prefer). Thanks Brenda

      You could try that. I’d say half coconut..half almond. I’ve not tried it, but I’d think it would be good.

    Chicken looks delish! BUT, I can tell you’re not really from the South. “Y’all” is the correct spelling!

      I don’t use any nutritional info. I’d say it has to do with what you put with it! Make sure you use little oil when baking it. Add a side like a sweet potato for a nice E side.
