I'll be the first to admit that I'm not great at making crepes.  I always tear mine and that aren't very pretty.  I'm SURE it's not the recipe, but the one making them.  On page 220-221 of the Trim Healthy Mama book is a great Crepe recipe that many gals on plan enjoy!  Don't forget to try those as well.  I saw a picture of my buddy, Mrs. Criddles breakfast Crepes(from the book) and wanted to try my own spin on them.  I was truly excited with how they turned out and couldn't wait to share it with you.  This recipe made two crepes, just like I pictured. easypeasycrepesIngredients: This is the basic crepe for a sweet crepe!  If you want savory, just leave out the Sweet Blend and vanilla.  You could even add some spices that you enjoy...garlic powder, Italian seasonings or whatever floats your boat. Filling: (this is an S filling)
  • 1/2 cup Low Fat Greek Yogurt
  • 2 oz Cream cheese (softened)
  • 1/2 Tbs THM Sweet Blend (or a bit more if you use Truvia)
  • 1/2 tsp vanilla extract
Instructions: Whisk the crepe ingredients in a bowl while you get a pan heated to medium heat. Non stick pan worked best for me. Spray with cooking spray. (I used olive oil cooking spray) When the skillet is hot, pour half the mix in the pan, move the pan around to get it to cover the bottom or the size you want it. Make it spread evenly. When it is done around the edges use a spatula to slip it over. It shouldn't stick to the pan if it's ready to flip! FLIP and let it cook for a few more seconds. It should be done quickly. Fill as you desire. *FP- No cream cheese in the filling.  Up to 1 cup of berries or up to 1/2 cup if it's blueberries. *E- No cream cheese in the filling.  Use E fruits like 1/2 a banana or a peach for a different twist! *S- Cream cheese used!  Use up to 1 cup of berries or up to 1/2 cup if it's blueberries. I hope this turns out well for you, I know it sure did for me!  I know I'll be eating these for snacks, breakfast or dessert!  Coming up with new fillings will be half of the fun.  You can double or triple your batch for a larger amount. I may make some ahead of time and have them in the fridge in plastic wrap so they are easy to grab when I'm in a hurry. Note:  I don't know if you can use other type of on plan flour.  You can give it a try, but I can't guarantee any results.  That may also change the fuel of your crepe depending on what you us.     Tried these. Easy to make and easy to cook, although I need practice. I some savory. I put some pizza seasoning in it and then topped with turkey pepperoni and dash if hamburger and a sprinkle of bacon bits and cheese. Put them in the oven to see what would happen. They crisped up around the edges and we had mini crepe pizza. Then made the sweet kind with a few blackberries. Oh yum.

    We made the ones from the book last night. The first one was a flop, the second was much better & I ate that. My husband messed up the next one & gave up out of frustration. We are big fans of crepes & have them quite often but the recipe we use calls for a cup of flour. We will definitely be trying yours again soon. We really want to find a recipe that will work for us. 🙂

      The first step is honestly buying the Trim Healthy Mama Book so that you understand the plan. You can buy it on their website or on Amazon, etc. They have a few new books coming out in less than a month! You may want to wait and buy those. They have a brand new cookbook coming out and a new book about the plan.
