I really love the Trim Healthy Mama Baking Blend.  I think I've mentioned that about a dozen times now on my blog.  I've got a slew of recipes now dedicated to shouting it's praises.  One thing I have enjoyed the most are muffins!  Banana Muffins, Basic Mega Muffin, Mega Banana Muffin to name a few.  Well, if you are like me, you crave chocolate.  How could I have gone this long without a chocolate muffin using the Baking Blend?!  Problem solved today.  Hope you like it as much as I did.
 ChocolateMegamuffin
 Ingredients:

  • 1 egg
  • 1 Tbs unsalted butter, melted (I used coconut oil, but think butter would be better)
  • 3 Tbs Unsweetened Almond Milk
  • splash Vanilla
  • 1/4 cup THM Baking Blend
  • 1 Tbs Cocoa Powder
  • 2 tsp THM Sweet Blend or 2 Tbs Swerve
  • 1/2 tsp baking powder
  • pinch of salt
  • 1 Tbs Lily's sugar free chocolate chips or some chopped on plan chocolate bar
Instructions:
Mix with a fork in a small bowl. Pour into a greased baking dish or one serving ramekin.  Bake at 350 for 18+ minutes, until done!
This would make about 3 regular sized muffins if you don't have a big bigger baking dish or oven safe bowl to use.  It may take a bit less time if you split it up into a few muffins. I'd check at 10 minutes. If you use your microwave, I'd start at 1 minute and 30 seconds and go up from there.  I much prefer my muffins now in the oven, but it can be done either way. To eat this in a FP or E setting:
  • 1/4 cup egg whites instead of an egg
  • use 1 tsp of coconut oil or butter
  • no chocolate chips
*If you use in an E setting you need other E fuels with it.  So maybe eat it like a dessert.  I'd personally just keep it an S and enjoy the yummy added fats of butter and chocolate chips!  Also, you will want to add some protein to this if you use it on it's own.

    Is this one serving? What protein would you add, Greek yogurt or eat with something else like entirely.

      Yes, these mega muffins are all 1 serving..one big serving. 🙂 I use greek yogurt or a protein shake with mine. Cottage cheese would work if you like it.

    Any chance you could help me make this into a full size recipe? This was the very best chocolate cake I have had since being on plan going on three years. Not sure if just quadrupling the ingredients would give the same results. Thank you for such a yummy dessert!

      Hmm…it’s a little bundt type pan I found at a thrift store! If you use a mug, it would have to be a big one. OR you could make three muffins.
