DSC_0243What says YUM more than blueberry muffins! This muffin-in-a-mug is sure to hit the spot!  I love to eat it with a pat of butter on top and some extra berries.  Sometimes I'll enjoy my muffin paired with 1/2 cup of Greek yogurt, sweetener and 1 tsp of natural peanut butter mixed in as my side!    This is my basic Mug Muffin recipe. I just change up the berries!
  • 1 egg
  • 1 Tbs. of water
  • 1 Tbs. of coconut oil (or butter)
  • 1.5 Tbs. of coconut flour
  • 1.5 Tbs. of golden flax flour
  • 1 Tbs of Truvia or Xylitol
  • 1/2 tsp. of aluminum free baking powder
  • vanilla
  • dash of salt
  • 15 blueberries (give or take a few)
I use a microwave safe mug for the muffin. I stir the mixture all the together and add the blueberries last.  I stir them in lightly so they don't mash.   I microwave my muffin for 1 minute and 20 seconds.  You may need to adjust the time according to how hot your microwave is.  If the top looks wet, I put it in for another 20 seconds.  I dump it out into a bowl and cut it in half.  BUTTER!!!  I love a pat of butter on my muffin. I also use this recipe to make a yummy blueberry waffle!  I add 1 or 2 more TBS. of water to loosen up the batter. You could add a little unsweetened almond milk to the batter as well if you don't use water.  The only trick to keeping this a nice S pancake is to keep the blueberries at or under 1/2 cup serving!     Do you think I could use all coconut flour? We tend to have issues with flax.

      You could try it! May need a little more moisture. You could use almond flour too. I just love this combo.

      I don’t “LOVE” the look yet but, it’s growing on me…

        I tried a MIM with only coconut flour…it turns to sand in your mouth…def. needs something else. I’m looking forward to trying this one in the morning:)

    I need a microwave just for MIMs! I am trying baking them in the oven, but I haven’t got the temperature and time right yet.

    This one looks yummy. Do you think I could substitute almond flour for the coconut flour? Or, do you think I could make the homemade coconut flour with coconut and use it in this recipe?

      You can try the almond flour! 🙂 I just like the taste of the coconut and flax for my muffins. 🙂 I’ve never tried to make coconut flour! That would be a fun thing to try! Let me know if you figure it out! Thanks for stopping in Laura!

    Hey Jennifer, I need your help with this recipe. Mine was a total flop. For the ingredients I used bought coconut flour, golden flax seed and frozen blueberries as well as the common other ingredients., Alll the blueberries fell at the bottom of my mug and was super wet. What did I do wrong-yours looks so yummy?

      I’m going to say it’s most likely the frozen berries. I’ve only used fresh! 🙁

      When using frozen fruit, to help it not sink to the bottom, give it a light dusting of the flour you are using, then add it to the ingredients. I hope this helps.

    I made these into waffles and smothered them in butter..mmm, they were good! I was out of blueberries so I substituted cinnamon for some of the flax. Thanks for the yummy breakfast recipe!
