One of my favorite breakfast recipes has been the Blueberry Baked Oatmeal!  I mean, I LOVE it.  I've been elimination some different foods that the doctor feels I may be intolerant too.  I neglected my favorite breakfast for a month and half until I couldn't handle it any longer.  MUST. HAVE. BAKED. OATMEAL.  I made it twice now without the eggs and dairy and it is just as yummy to me.  I had to share with you. Baked Oatmeal Ingredients:
  • 3 cups of Gluten Free Old Fashioned Oats
  • 2 cups of unsweetened almond milk (you could another Fuel Pull on plan milk)
  • 1 tsp of vanilla
  • dash of salt
  • 1/2 cup unsweetened applesauce
  • 1/2 to 1 tsp of cinnamon (I like a lot)
  • 1 tsp of baking powder
  • 1 TBS of chia seeds (optional, but I add it for good fat)
  • 1 TBS of THM Sweet Blend
  • 3/4 to 1 cup of blueberries, apples, peaches, berries of your choice (I left them out this time)
  • 1 scoop of Custom Collagen (optional, added protein)
Instructions: I simply put this all a large bowl and mix it together with a spoon.  I add berries or fruit last on the final stir so I don't mash them.  I pour it into a glass pie plate or a 9 by 9 baking dish.  Bake at 350 for 30 minutes.  Oven times of course may vary.  This serves 6 six servings.  I did add protein to mine, but you can always add extra with a protein shake.  I use my Custom Collagen for that now as well and it's very yummy.  For those who can have dairy...a side of Greek 0% yogurt or some cottage cheese would be nice. I love this cold.  I know it sounds odd!  I always let it cool, refrigerate and eat it cold later.  It's great warm too, but it's just my style.  If I don't put berries or fruit in the dish, I put them over the top of it and pour on some nice cold unsweetened almond milk.  I'll show you.... oatmeal2I love having a printable form of my recipes so you can print them off and put them in a binder or folder with your other recipes.  I think your whole family will enjoy this, even if they don't have allergies to these foods I'm avoiding in the recipe.  You can always try the original version I mentioned at the beginning if you'd like.  Either are delish! I hope this is a blessing to my friends with food allergies or intolerance issues. Doing the THM plan with food allergies is not that complicated after you get down the basics.  There is a great group of girls doing the plan together on the Allergen Free Trim Healthy Mama boards.     I’m glad you shared this recipe. I’m trying to do THM but have one particular food allergy/intolerance that makes it hard to include some foods in my meals. This recipe will be a good start for me for the day. I’ll also check into the Allergen Free group you mentioned. Thank you!
